I have a 2021 Mazda CX-5 and I am interested in towing a trailer. I see two Curt trailer hitches one is 2" and the other is 1-1/4". What is the difference between them other than size?

Your 2021 Mazda CX-5 is compatible with a Class II and a Class III Curt trailer hitch. Besides the difference in size, 1-1/4" and 2" respectively, they have different maximum weight limits.
The Curt trailer hitch that is compatible with your vehicle, Curt Trailer Hitch Receiver - Custom Fit - Class II - 1-1/4", part # C12170, has a maximum tongue weight of 350 lbs and maximum gross trailer weight of 3,500 lbs.
The Curt Trailer Hitch Receiver - Custom Fit - Class III - 2", part # C13315 has a maximum tongue weight of 600 lbs and a maximum gross trailer weight of 4,000 lbs.
You will have to check your towing capacity of your vehicle in the owner's manual. You will adhere to the lowest maximum weights between your vehicle and the trailer hitch on your vehicle. If I have to make a trailer hitch recommendation, I will choose the Class III option. You will be able to carry more accessories since 2" is the more common trailer hitch size.
The last thing you should consider is adding a 4-way connector to your vehicle. Any trailer that has brakes will have a 4-way harness so your trailer can mirror the brake lights, turn signals, and running lights of your tow vehicle. My trailer wiring recommendation for your vehicle is the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector, part # 118746. This wiring harness will not require any wire splicing, it is a plug and play harness.
