Upgrading the wheels on your 2019 Jayco Eagle HT 5th wheel is definitely a common upgrade, but there are a few things you will want to check.
First, you want to make sure that you will still have at least 3" from the top of a larger tire to the bottom of the fender/wheel well. I couldn't find the exact size of the tires, but as an example, the Westlake ST205/75R15 Radial Tire w 15" Lynx Aluminum Wheel # LHAW320, will have an overall diameter of 27.1". The Karrier ST225/75R15 Radial Trailer Tire with 15" Galvanized Wheel - 5 on 4-1/2 - Load Range C
Item # AM32468, as a larger example, will have an overall diameter of 28.4".
Next you will want to make sure you have around 1.5" of clearance from the sidewall of the tire and the side of the fender/wheel well. As examples again, the # LHAW320 will have an 8" section width and the larger # AM32468 will have an 8,9" section width. This is measurement isn't quite as important as the height measurement, but you do want to make sure the new tire is not too wide.
I do also need to mention that both of these wheels use a 5 on 4-1/2 bolt pattern. This was another thing that I couldn't confirm so I did include an article on how to do this.
So in conclusion, yes you definitely can upgrade to larger tires. But you will want to make sure you have the proper clearances for them to fit.
