Is this, or can this be used on the Ultimate Anderson Hitch or is it just for regular hitch balls? Andersen Accessories and Parts - AM3664-2516 Nylon Cap

There is a cover you can use for your 2-5/16" hitch ball, but the Anderson cap is just for their greaseless Hardball hitch ball, so it would not be used on the 2-5/16" Andersen Ultimate hitch ball. However, if you did want a cover for that or a different hitch ball, there is an option from Fastway:
