Question:
Could I connect a 12 volt plug into the power wire and then use the 12 volt socket in the back of my vehicle to power the jack?

The best way to power an electric A-Frame jack is with a trailer mounted battery and use the 12V accessory power feed from the trailer connector to provide a maintenance charge to the battery.
If that isn't possible, the only other acceptable methods would be to tap the jack power wire into the 12V feed from the trailer connector or install a 7-way plug like # A7WCB on the jack power wire and directly use the 7-way on the tow vehicle to power the jack.
The 12V accessory socket/power port in your cargo area is typically only rated for 10 amps which wouldn't be sufficient. The 12V accessory circuit on the 7-way is usually rated for 30-40 amps which would provide enough power for your jack.
