All the hitches we have available for your 2016 Honda Odyssey are going to show a little bit of hitch, but the one that shows the least is the Draw-Tite Max-Frame Trailer Hitch Receiver - Custom Fit - Class III - 2" Item # 76025. This only shows the 2" receiver tube that you insert your accessories into. This is the cleanest looking hitch available in my opinion.
This hitch works great with our 24x60 etrailer Cargo Carrier for 2" Hitches - Steel - Tilting - Folding - 500 lbs
Item # e98874. When using our cargo carrier you don't have to worry about loosing rear hatch access because we designed our carrier to tilt away from the vehicle so you can use the rear of your Odyssey the same as you would normally! I suggest grabbing our Cargo Bag w/ Mounting Straps - Water Resistant - 20 cu ft - 59" x 24" x 24" Item # 988501 because it will fit perfect and comes with the straps to tie it down already connected to the bag!
It does a VERY good job keeping the water out even in the most extreme cases. I put it to the test and ran it through a high pressure automated car wash! It was bone dry after the test. I've included a video of the bag, and carrier. Check it out for yourself!
