More information as to how well the trailer performs at 70 mph with four heavy kayaks would have been useful for me.

The Malone Microsport Trailer for 4 kayaks part # MPG462G2 that you referenced would be a great option to carry your Carolina kayaks on your road trip. There would be a bit of overhang but that's to be expected and would not be an issue at all.
