when using this system are you able to set the ride height of the trailer 2 inches higher then stock or will it just give you the standard ride height?

The Roadmaster Comfort Ride Leaf Spring Suspension Kit # RM-2460-2560 that you referenced is going to mount to your existing suspension hangers, so it will simply maintain the current ride height. The only way to lift the trailer with this kit would be to also replace your existing hangers with longer ones.
If you just wanted to lift the trailer, a good option is with the Tandem Axle Lift Kit # RR23QX. This will raise the height of your trailer by about 2-1/4". I have included the written installation manual below so you can see exactly how it works.
