My 5th wheel calls for 235/80-16 tires. Is there any advantage or disadvantage to using a 85 series tire?

The larger size of 235/85-16 will have a bit higher capacities typically and a very slightly larger size than the size you currently have of 235/80-16. If you need to replace all the tires you want to go with the part # AM10295 that you referenced which has a capacity of 3,640 lbs at 95 psi.
But if your current size is working well for you there would really be no compelling reason to upgrade. We even have a higher weight rated tire in the smaller size as part # PRG80235 which has a capacity of 4,080-lb max load at 110 psi.
