I am looking to do a bit of very light towing with my 2019 Subaru WRX so I am looking for the recommended trailer hitch and wiring for this?

To tow a light trailer with your 2019 Subaru WRX I think the best overall option is the Draw-Tite Trailer Hitch Receiver # 24968 because it gives you the best overall value for your vehicle. This hitch has a 1-1/4 inch receiver and a 2,000 lb towing capacity with a 200 lb tongue weight capacity. Even though it has a visible crosstube, the Draw-Tite still has plenty of ground clearance (10-1/2 inches to the top of the receiver) for trailer towing, and is a much easier install than the EcoHitch# 306-X7257 (not to mention much less expensive). I have added a link to a video install of the Draw-Tite # 24968 on a 2019 WRX for you to take a look at.
For trailer wiring with this hitch you will need the Curt Wiring Harness with 4-Pole Flat Trailer Connector # C56259 along with the Draw-Tite Drawbar # 3593 and - depending on the size of your trailer coupler - either 1-7/8" Hitch Ball # 19256 or 2" Hitch Ball # 19258.
