I'm doing some towing lately and seeing some sag on my '19 Tacoma. What suspension enhancement do you recommend for correcting this?

Suspension enhancement systems like Timbren springs are perfect for the scenaro you're describing. These solutions supplement your factory suspension but don't necessarily increase your capacity. Timbrens are hollow rubber springs that sit above the rear axle to help stabilize and level your Toyota Tacoma. Below are what I recommend of the available spring choices.
For off road applications, I recommend the Timbren Active Off-Road Bumpstops # TABSOSR for vehicles if the axles are under the leaf springs. To include the U-Bolt Flip Kit for more ground clearance, part # TABSTRFK is what you're looking for.
On the other hand if you're going to be on paved roads only, I recommend a different option. If your Tacoma has 3 Leaf Springs then you will want part # TTORTUN4L, but if it has 4 Leaf Springs you will want to go with part # TTORTUN4 instead.

When Counting my leaf springs on my 2020 Tacoma SR 4x4 - do you count the rebound leaf as well ?? For example - 3 leafs + one rebound spring is sometimes called 3+1 . IS this a 4 leaf pack or a 3 ?? I find conflicting information online. Thanks !!
