Can I add a 7-way plug to the wiring on the jack so I can power it from the tow vehicles power? Back up, plug-in the jacks 7-way male to the tow vehicle, lower the tongue onto the hitchball and secure it, unplug the jacks 7-way, secure it, and plug-in the trailer lights 7 way to the tow vehicle. Drive away. Yes?

Although wiring an electric jack like the etrailer.com # EJ-3520-BBX you referenced to a dedicated battery on the trailer is the preferred solution for ensuring you get the needed power, you can indeed wire it to a 7-Way plug like # A7WCB for it to be connected to the 7-Way on your truck when needed.
If you don't yet have an electric jack, we actually have a 3,500 pound unit available with the Buyers Products # 3370093500 that is designed to be used this way right out of the box. This particular jack features a pre-wired trailer connector that you can connect to the truck's 7-Way for simple operation. It has a total lift of 22-1/2 inches.
