Question:
If I install an EZ5 baseplate how do the safety cables work if I dont use the quick connect bar? It seems that one side of the safety cables dont have a hook and they are meant to attach into the EZ4 quick connect.

The Roadmaster EZ5 Base Plate Kit # RM-523179-5 referenced in your question is confirmed to fit your 2018 GMC Yukon XL and is compatible with the excellent Sterling All Terrain Tow Bar # RM-576. However, as you mentioned, the included safety cable anchors will not fit the base plates. To use the cables that are included with the Sterling Tow Bar, they will simply need to be attached to the frame of the vehicle or welded to the receiver portion of the bracket. Otherwise, you can use a standard safety cable set like the Roadmaster # RM-643 instead.
If you would rather use the Sterling cables as they were designed to be used, I recommend going with the Roadmaster EZ4 Base Plate Kit # RM-523179-4. The cables will mount right to the brackets on this kit without issue.
I have attached the installation instructions for the EZ4 and EZ5 Base Plate Kits, along with a short video demonstration on the Sterling Tow Bar that you can also take a look at.
In order to flat tow your 2018 GMC Yukon XL, you will also need a lighting solution and a supplemental braking system. If you still need any of these items, please let me know and I will be happy to make some recommendations. I have also attached a great article on flat towing that you might find helpful.
