I do have a hub and drum/electric drum brake combination for you, but unfortunately the only pre-greased hubs that we have are idler hubs.
I was able to verify with Lippert that the axle with the part V000378958 is a 3,500 lb axle. They were not able to verify the bearings and grease seal but typically a 3,500 lb axle will use an Innder Bearing # L68149, and Outer Bearing # L44649, andthe Grease Seal # 58846 that has a 1.719" ID and a 2.565" OD.
If you can verify that this is the case for your spindles then I recommend using our Trailer Hub and Drum Assembly # AKHD-545-35-EZ-K along with the Self-Adjusting Electric Trailer Brake Kit # AKEBRK-35-SA. The hub and drum assembly has a 10" diameter, has a 5 on 4-1/2" bolt pattern, and comes in a quantity of one. The brake kit is self-adjusting like you were looking for and comes in a quantity of two. The mounting hardware that you need is part # BRKH10B and comes with 8 nuts and 8 lockwashers.
Although pre-greased hubs are very convenient, packing your bearings actually isn't too difficult, and we have some tools you can use to speed up the process. You can use a bearing packer like part # PTW1218 or part # ALL647646 to make packing the bearings much easier and a little less messy than doing it by hand.
I have also attached some videos of the hub and drum/brake assemblies being installed that you can use as a reference.
