have a 1-7/8, 2000 lb hitch ball with 1-1/2inch size nut. what foot pound of torque is correct?

The torque value for your 1-7/8 inch ball is going to depend on the diameter of the shank. Draw-Tite lists the following torque specs:
"During hitch ball installation, torque all 3/4" shank diameter balls to 160 ft. lbs., and 1" shank diameter balls to 250 ft. lbs., and 1-1/4" shank diameter balls to 450 ft. lbs."
