I have a dealer installed mumby removable gooseneck ball hitch on a 2013 ram 3500. I am looking for a fifth wheel companion or adapter plate for a Reese fifth wheel hitch that would fit in the hole in my box. Something like a curt x5 if that is possible with a Mumby brand hitch.

In order to install a 5th wheel hitch in your truck the best solution I can offer is to remove your existing gooseneck and install either 5th wheel base rails or a B&W Turnoverball gooseneck hitch.
If you decide you want to change out the gooseneck hitch in your truck, the B&W Companion 5th Wheel Hitch # BWRVK3500 and Companion slider hitch # BWRVK3400 are compatible with the B&W Turnoverball Gooseneck Hitch # BWGNRK1314 for your 2013 Ram 3500. Using the B&W system will allow you to tow either with the gooseneck or the 5th wheel hitch when needed.
If you want to install above bed, 5th wheel base rails, I recommend the Reese Quick-Install Custom Base Rails and Outboard Installation Kit for 5th Wheel Trailer Hitches # RP56010-53. These custom fit base rails will use pre-drilled holes in the frame of your truck to install, and the outboard installation brackets offer much easier access to installation hardware than inboard brackets.
The Curt X-5 Gooseneck-to-5th-Wheel Rails Adapters you referenced are confirmed to fit specific Curt and B&W gooseneck hitches. I cannot guarantee that they will fit in your existing gooseneck.
