Hello Dean, thanks for reaching out. I do have a good option for you, although we do not have an exact match for the Atwood model R1737BB. Take a look at the GE Profile Propane RV Range # GE24VR. This is a 3 burner gas range with a stainless finish. Overall it measures 20-1/8" wide x 17-3/4" deep x 16-1/8" tall. So it will fit in your cutout nicely. It is not quite as deep at your current range but this will still be our best option that you can use without having to modify anything.

If you don't already have a 4-way wiring harness, we need to start there to get your 7-way. For a 4-way, I recommend the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C56020 which plugs in behind the tail lights of your 2007 E350. I reached out to Dexter and they no longer make that axle. I can confirm based on the bearing sizes you gave that you have a 3,500 lb capacity. If you determine you just want to replace the hub, I recommend the Trailer Hub and Drum Assembly for 3,500-lb Axles - 10" Diameter - 5 on 4-1/2 # 84546UC3 or # AKHD-545-35-EZ-K if you have the grease zerk integrated in the spindle.
