Hey Aaronb! The best way to do this is with an extended ball mount. The Gen-Y 2-Ball Mount # 325-GH-064 you were looking at is a good option with an extra long 12-1/2" shank. However, the right ball mount really depends on what kind of rise/drop you need for your setup. This is a straight shank with no rise or drop.
It will add in extra pieces, but an adjustable ball mount like # 325-GH-623 or # 325-GH-1624 may be necessary to extend out and keep you level. You could pair these with one of the extended shank Gen-Y ball mounts depending on the clearance you need. You can also add in an anti-rattle like # GY28XR to help keep that movement and noise down.
