Will the RS67VR run an induction cooktop, microwave, and coffee machine? Not used all at the same time but maybe sometimes.

The Rich Solar 1200w # RS67VR kit is beefy and can support those appliances only when paired with the right battery and inverter combo.
While the solar panels themselves don't directly power AC appliances, they do try to keep your batteries full. To run high-wattage kitchen gear, you’ll need a 3,000W pure sine inverter and at least 400Ah of lithium for safety and runtime. Paige and Eli in Utah have this kit and run a microwave and espresso machine off two 300Ah LiFePO4 batteries with no issues, and haven’t needed their generator for much at all, unless they were running the AC along with those appliances.
If you don't have batteries yet, I recommend going with 2 of the Rich Solar Alpha 2 Pro Lithium Battery - Bluetooth - 200 Amp Hour # RS84VR wired in parallel, which gives you 400ah of 12v lithium power.
