Question:
I need a two-kayak trailer for traveling with my wife, but when fishing alone Ill have a single 120lbs fishing kayak. Will the trailer handle alright with one kayak on board?

Hey Ben, the Malone Ultimate Angler MegaSport Trailer for 2 Heavy Kayaks # MPG550-AH would technically work fine for what you're needing, but it's a bit overkill.
Assuming you have all of the fishing carrying gear covered, you can get a just as capable trailer in the Malone EcoLight Sport Trailer with V-Style Carriers for 2 Kayaks # MAL43FR at more than half the cost.
This trailer will do just fine with one or two kayaks, has a weight capacity of 400 lbs, and includes V-style carriers so you can haul your kayaks easily.
The Malone Ultimate will work the same with one or two kayaks, but I feel like unless you really like that trailer because it comes with the fishing rod carriers, it's not really necessary.
Sorry this is kind of long winded, but if you need anything else feel free to leave a comment!

I appreciate the answer and guidance. The main reason for the trailer is cross-country trips with two sit-on-top kayaks (and maybe a third sit-inside) with fishing and kayaking gear all carried on the trailer. Likely in a cargo carrier on the top along with the rod tubes. That's why I was thinking the heavier duty - long miles & storage capacity. I've just been putting my kayak in the truck bed when fishing locally, but there are times a trailer would be nice. That single-kayak use is a secondary concern though. I appreciate your thoughts on this!
