Do you carry the brake pads and hydraulic plungers for this set up? I will need two plungers and a set of brakes. If not, do you know the part numbers?

For the price of replacement brake pads and shoes it's almost always a better solution to go ahead and just replace the entire brake assembly. And in your situation with the current condition of your assemblies I would strongly recommend you do that based on how much rust is there.
In order to pick out assemblies you need to know the diameter of the assemblies and the width of the brake brake pads. I can tell by the pics you have the standard 4 bolt mounting flange. The most common brake assembly size that has the 4 bolt mounting flange is the 10 x 2-1/4 inch assemblies. If that is what you have you could use the part # 40716 for the left hand side and part # 40715 for the right had side.
These assemblies are galvanized to help fight corrosion.
