I am looking for a trunk mount bike rack for my 2020 Prius Hatchback. I need something that is quick and easy to take on and off of my car to then stash in my trunk regularly I commute with my car and then bike each day. I am considering either the Saris Bones 2 Bike Rack - Trunk Mount - Adjustable Arms Item # SA805BL OR the Saris Bones EX part # SAR83FR? Which would you recommend or another altogether?. What is the main difference between the EX and the non EX? Thank you

While both fit your 2020 Toyota Prius, the biggest differences between the Saris Bones 2 Bike Rack # SA805BL and Saris Bones EX 2 Bike Rack # SAR83FR is the latter has an added top anchor leg for more stable mounting, as well as strap management so you can store the straps into the rack's tube so they aren't flapping about while you are travelling. Due to that I'd go with the Bones EX # SAR83FR.
The only thing to keep in mind is that with both racks you will need to replace the top and side hooks with the Saris Hatch Huggers # SAR88MR (you'll need to order a quantity of 2 of the # SAR88MR to get 4 in total).
