I have a 2012 Chevy 3500 HD 4wd cab and chassis truck and installed the ride rite bags and didnt see anything in the instructions to remove the overload springs but I can feel them hitting occasionally. Should the overload springs have been removed?

You must be using Firestone kit # F2176 because the part you came from is for a Toyota Tundra. Kit # F2176 is designed to fit a 2012 Chevy Silverado 3500 cab and chassis 4x4 with or without the overload springs. The overload springs stay in place, do not remove them to install this kit.
Getting the brackets lined up just right for this kit can be tricky. Make sure that the bracket on top of the overload spring is level. If not lined up properly one end of the Firestone spring will be closer to the overload spring. That could be what you are feeling.
Also the air bag is constantly making contact with the overload spring. You can try removing some of the air in the air bags to see if that improves the issue.
