Will this 5th wheel to goose neck converter void my warranty on my 2021 Forest River Sabre 36BHQ?

The only adapter that won't void the warranty on your 2021 Forest River Sabre 36BHQ is a goose box like the Reese Goose Box 5th-Wheel-to-Gooseneck Air Ride Coupler Adapter - Lippert 1621 - 16,000 lbs # RP94716. This would replace your pin box and would need to match your current bolt pattern. This particular adapter fits the Lippert 0719, 1621 and 1621HD.
One thing you should keep in mind is that the warranty is only a 12 month warranty. If you are outside of that window it is a non-issue. The Convert-A-Ball Cushioned 5th-Wheel-to-Gooseneck Adapter w/ Offset - 12" to 16" Tall # CAB-C5GX1216 is a great solution for towing your 5th wheel with your gooseneck hitch. This has a towing capacity of 20,000 lbs and pin weight of 4,000 lbs. It has an adjustable height along with a 7-1/2" offset to add additional clearance.
