As far as the Draw-Tite - 2" # 75673 and the etrailer Hitch - 2" # e98847, these two hitches are almost identical in every way when installed on your 2018 Subaru Outback. They both provide you with 600 pounds of maximum tongue weight capacity and 4,000 pounds of maximum gross towing weight capacity. Also, the installation difficulty and process is virtually the same.
Two things, however, stand out as an advantages for the etrailer hitch. First off, it is made in the U.S.A. while the Draw-Tite hitch is made overseas. U.S.A.-made parts generally include better overall construction. Another advantage is that the pinhole of the etrailer hitch installs only 2-1/2" inches from the face of the bumper on a 2018 Subaru Outback Wagon. On the Draw-Tite, this measurement is 5-1/2. A shorter measurement means that the hitch will be compatible with more accessories without interfering with the rear bumper. For these specific reasons, I recommend going with the etrailer hitch over the Draw-Tite
I went ahead and attached installation walkthrough videos of both of these hitch models.
