So confused between 54006-057 and 54006-009 Which one should I choose for 7-way Traditional hookup?

The difference is the color coding of the wire functions for the two 7-way kits part # 54006-057 and # 54006-009 that you referenced. The part # 54006-009 is going to have the wiring colors that are most common on trailers with 7-ways whereas the # 54006-057 uses a color coding that closer resembles a 4-way with additional functions added on beyond the 4 circuits.
Functionally they are the exact same though.
