Typically, a 7,000 pound and 8,000 pound axle will not only use different bearing combinations, but the bolt pattern for the backing plate or caliper bracket will also be different. The 8,000 pound Dexter Disc Brake Kit # K71-635-91 will us a # 25580 inner bearing, a # 02475 outer bearing, and uses a 4 bolt pattern. If your axle doesn't match this, you will need to go with a 7,000 pound kit. If it does match, you are good to go.
If you end up needing a 7,000 pound kit, I recommend the Disc Brake Kit # K71-694-695-12. This uses the same # 25580 inner bearing, but then uses the # 14125A outer bearing. It will also utilize the 5 bolt pattern found on 7,000 pound axles. This is a similar kit, but the hub and rotor are integrated as opposed to be being separate on the # K71-635-91.
I included diagrams of how the different bolt patterns measure as well. Pictures are a lot easier than trying to type it out.
