I have a ram 3500 HD 2 wheel drive Dually that squats when I hook up my 42 Ft 5th Wheel Toy Hauler. Which Sumo Springs would be the best for me, SSR*312-54 or SSR 301-47-2?

I'd go with the lighter duty SumoSprings part # SSR-312-54 if you ever plan to drive the truck without your trailer connected as the ride quality would be much nicer than the higher rated # SSR-301-47-2 that you mentioned.
