Your board can be no more than approximately 1-1/4" thick if you'd like to completely fold up the folding workbench you asked about:

The portion of the CargoSmart # 3481744 that mounts in the E-track bracket will be 1-1/4" away from the leg braces when folded up, which is why that's the maximum thickness your board can be.
