Question:
I have a toy hauler with a listed dry tongue weight of 525 pounds and a 7,500 pound GVW. I was looking at the 800 lb rated Trackpro, but with 40 gallons of water or more in the holding tanks in front of the trailer axles, plus propane, plus batteries, etc., the hitch weight could pretty easily climb to 800 - 900 pounds. Would I be better off with the 800 lb rated Trackpro or the 1,000 lb version and have it ride a little more rough when empty?

I never recommend a weight distribution hitch that is under weight. If you choose to go with either the 800LB Blue Ox TrackPro # BLU47FR or 1,000LB Blue Ox TrackPro # BLU77FR I recommend getting a spare set of weight bars in the other weight class. This will allow you to use whichever bars you need for the toy hauler depending on your tongue weight.
800-lb Spring Bars # BLU25FR (600-800lbs of tongue weight)
1,000-lb Spring Bars # BLU52FR (800-1,000lbs of tongue weight)
You can use a tongue weight scale like the etrailer Tongue Weight Scale for Campers and Utility Trailers - 2,000-lb Capacity # e99044 to quickly and easily determine the tongue weight.
To simplify this process, I recommend the Reese Steadi-Flex Weight Distribution System # RP66559 which is rated for tongue weights of 500-1,000lbs. This will allow for fewer parts as well as allow you to tow the trailer with no additional tongue weight or fully loaded with the same set of weight distribution bars.
