The Replacement Footplate # JF-100-ZBK you were looking at fits all jacks with a 2-1/4" outer tube, and 2" outer tube. Since that is what your Ultimate Trailer Jack # 322-RDJ-2K has, this will be an exact replacement.
Both the jack and the foot have the same 2000lb rating, so you won't lose any capacity of the jack.
