While the Stealth Hitches Hidden Rack Receiver - Custom Fit - 2" # SH89ZR you were looking at for your 2019 Volkswagen Golf R cannot be ordered with a 1-1/4" receiver, it is compatible 1-1/4" Receiver Attachment # 391RR1 which will give you the 1-1/4" receiver you want.

Keep in mind that using the 1-1/4" receiver will reduce the tongue weight rating of the hitch to 300lbs.
