Purchased a receiver for our 2012 Volvo XC70, item #13266. Looking for a hitch with 6.75 of rise. Any recommendations?

For the Curt hitch part # 13266 that fits your 2012 Volvo XC70 the ball mount you'd want would be the Curt # C45338 which has rise of 7 inches. With suspension sag from the tongue weight of the trailer this would put you right where you need to be for the trailer to sit level.
