Im looking at installing a hitch for my 2018 Chevrolet Bolt EV. Im currently looking at the Draw-Tite and EcoHitch. The only use of the hitch would be to carry around two bikes. Is there a significant difference between the 1-1/4 and 2 opening?

There is a pretty significant difference when it comes to the hitches you mentioned that fit your 2018 Chevy Bolt EV, the Draw-Tite Trailer Hitch Receiver # 24956 and EcoHitch Hidden Trailer Hitch Receiver # 306-X7359.
As you mentioned, the Draw-Tite has a 1-1/4 inch receiver while the EcoHitch has a 2 inch receiver, but the Draw-Tite is also a Class I hitch. That is important because a Class I hitch is only compatible with Class I bike racks, while the 2 inch EcoHitch does not have those restrictions. This means you have not only significantly more options for a bike rack with the EcoHitch. For example, there are currently around three times as many bike racks that fit a 2 inch hitch than a Class I hitch (which is also limited to carrying just two bikes).
Due to that, for your 2018 Chevy Bolt EV I highly recommend the EcoHitch Hidden Trailer Hitch Receiver # 306-X7359.
