Question:
I have 2018 Mazda 3 Grand Touring. The factory warranty one the drive train is lifetime, as well as a 7yr bumper to bumper on all other components, and a 3 yr warranty on interior components. Will the installation of a hitch for light towing void my warranty?

The act of installing a hitch on the 2018 Mazda 3 Grand Touring will not void the warranty because you are covered under the Magnuson–Moss warranty act which prohibits manufacturers from voiding a warranty for adding aftermarket parts unless that after market part caused damage the vehicle.
With that said, if Mazda does not recommend towing anything with the Mazda 3 Grand Touring (more than likely they mention it in the owners manual) if towing damages the transmission or any other mechanical components of your Mazda they may void the warranty if you were towing. If you decide to use the hitch for a bike rack or other accessory that will not affect the warranty.
If you decide to use a hitch on the 2018 Mazda 3 Grand Touring I recommend EcoHitch Hidden Trailer Hitch Receiver part # 306-X7305 if you have the hatchback. The EcoHitch will give you a 2" hitch receiver on the Mazda with a concealed cross tube so the only portion of the hitch that is visible once installed is the receiver tube.
If you have the sedan you will need part EcoHitch part # 306-X7303. You will also need part # 118405 for the wiring if you have a hatchback or a sedan.
You will also need a ball mount, I have attached a helpful article that explains how to figure out the rise/drop of a ball mount. Since you do not have the hitch yet I recommend measuring from the bottom of the bumper to the ground. I have also attached our selection of ball mounts available.
