Looking for the simplest option for installing a wiring harness on my 2019 Cadillac XT5. Preferably something that doesn't require splicing wires. What do you recommend?

Yes, I recommend the Tekonsha part # 118720 as an ideal solution for you. This Wiring Harness for your 2019 Cadillac XT5 provides a 4-way trailer connector and plugs into the exterior connector located up and to the driver's side of your 2019 Cadillac XT5. No splicing required.
If you haven't yet purchase your hitch, I recommend the Curt Trailer Hitch Receiver # C13285 as a solid option for your towing needs and looks great on the back of the XT5 as you can see from the included customer photo.
