What is the weight capacity for them? Could they be used for a fold out bed? Say a 250lbs person?

There is not a listed weight capacity for the CargoSmart Folding Track Brackets part # 3481744 because much of this comes from how you attach the tracks that these brackets fit in. That said, I don't think you will have any issues using this as a fold out bed for say a 250 lb person so long as the tracks are attached securely. If you need to further secure the tracks to bear more weight you can use backing plates, part # e96RR.
