Question:

I want to purchase a quality cover that rolls up like this model. My concern is while towing my fifth wheel, will the added few inches that will narrows the width of the bed, give any interference when turning? Will the pi box of the camper hit the cover rail?

The clearance you want between the trailer overhang and the truck bed rails should be at least 6 inches. You'd have to measure you current clearance there to determine how well the TruXedo Pro X15 Soft Tonneau Cover # TX1446901 would fit. Where you'd most likely see an issue is when you are in a tight turn with the rolled up cover near the front of the bed. Since this is a short bed application I can see this not being the best possible solution. Instead I'd recommend a retractable cover that won't add height to the bed rails.
