The pintle mounting plates with 14 adjustment holes are going to be your best bet. These include the Curt one you referenced # C48341, another Curt option # C48342 which has a slightly longer shank, and Tow Ready mount # 63058 which is rated for 8K (the other two are rated for 10K) and a longer shank than the other 2 options.
Based on what you are looking for # C48341 is the one that I would go with. The amount of rise or drop will also depend on the pintle that is attached to this mount. I estimate around 8 inches of rise. The 14 hole options offer the most rise or drop.

Hey Michael, The C48341 hitch plate specifically mentions that it can only be used in the drop position in the description. Are we still ok to use as a riser?
