  The best option I have for an adjustable pintle hook that slides into a 2" hitch is the Curt Pintle Hook Mounting Plate part # C48341 with the Curt Pintle Hook part # C48210. I am not aware of any way to use a swivel type pintle hook with a 2" hitch. That said, you might be interested in Lock-N-Roll system, like part # 336TS528 and part # 336VS501 which would give you the swivel feature and 2" hitch compatibility.

  The pintle mounting plates with 14 adjustment holes are going to be your best bet. These include the Curt one you referenced # C48341, another Curt option # C48342 which has a slightly longer shank, and Tow Ready mount # 63058 which is rated for 8K (the other two are rated for 10K) and a longer shank than the other 2 options. Based on what you are looking for # C48341 is the one that I would go with. The amount of rise or drop will also depend on the pintle that is attached to this mount....

I recommend using the Convert-A-Ball Cushioned, Adjustable Pintle Mounting Bar # AMPC3 if you need a mounting plate for use in the rise position. This mount has a cushion built into the hitch to help reduce shock transferred from the trailer to your tow vehicle.
