The Easy-Hitch Light-Up, Telescoping Hitch Aligner # JE00600 is a great option for aligning hitches and giving you a visual guide, but you cannot use them while driving. The magnets are simply not strong enough for travel and could become a road hazard. For the post style lighting you desire, I recommend the CE Smith Post-Style Guide-Ons with LED Lights for Boat Trailers # CE27740.
For your trailer wiring, you can use the Submersible Light Kit # TL5RK or the LED Kit # TLL9RK. Either will work well for your to completely submerge in the water to launch your kayak. With either option, I recommend using the heat shrink connectors # DW05744-10 to create a water tight seal versus using the simple connections that could cause feedback when connected. It is a good idea to disconnect the trailer wiring from your vehicle at the trailer connector prior to submerging your trailer.
