Question:
We live in Houston, TX. We are going skiing in Colorado in March 18. I wanting to be prepared with chains in case we need them. We will not be using them often other than for this instance and perhaps other skiing trips. Which style of snow chains do I need? Should I literally go with the least expensive given the number of times i expect to use them? Suggestions please. Tires are 275/55-20.

For you situation an inexpensive set would be your best option. I would recommend the cables part # TC2028. This will get you by in an emergency situation a handful of times like what you might see and won't be overkill on the budget or application.
I attached an install video for these for you to check out as well.
Question:
Are the cables all I need or do I also need rubber chain adjusters? If so, which ones?

Tensioners are a great idea. The part # TCMA2 would be your best option. These will make adjusting the tightness of the chains a bit easier.
