The Locking Stainless Steel Flush Door Latch, # L1883, has a threaded hole on the inside part in which you could insert your own knob so that it can be easily opened from inside. Another option is basically the same door latch that comes with the knob already in place. It is # L1833.

It depends on how the old one is attached to the door but you will likely have to pry it off. If there are no visible fasteners there wouldn't be any other way. You would have to be very careful not to damage the door in the process. When…
