Im looking to replace a latch like this on my trailer tack room door. Is there a way to remove one of these latches that is broken and replaced with a new latch?

It depends on how the old one is attached to the door but you will likely have to pry it off. If there are no visible fasteners there wouldn't be any other way. You would have to be very careful not to damage the door in the process.
When installing the new one I would put a screw in each corner which will require drilling the holes for the screws.
Typically, the Junior Door Latch would install by routing or cutting out a 2-3/4 by 3-3/4 inch hole and would then either be bolted or riveted to the door through holes that would need to be drilled in the flange around the latch. The latch is meant to be used in doors up to 3/4 inch thick. Because the latch is a universal fit item with many different mounting possibilities, the mounting holes are not pre drilled and mounting hardware is not included.
If you would prefer something with the holes pre drilled that has a stainless steel finish, I would recommend the Redline Junior Locking Stainless Door Latch, # L1833.
