Question:
I am planning on taking my bikes from Western PA to South Florida and wondering if the Kuat Transfer will be up to the task or should I go with the Sherpa.

The Kuat Transfer 2 Bike Platform Rack # KU74FR referenced in your question is a great and extremely durable bike rack that will allow you to secure up to 2 bikes at 40 pounds each. It is constructed of black powder coated steel that is corrosion resistant and will hold up extremely well. This rack will not have a problem securing your bikes during long road trips like you have coming up. The included anti-rattle hitch pin will also help to reduce movement and noise of the rack inside the hitch receiver. The carrier can be easily folded away from the vehicle, with the bikes still loaded, to allow for easy rear cargo access. This will be especially valuable when making pit stops during your trip and you need to access the rear of the vehicle.
The Kuat Sherpa 2.0 2-Bike Platform Rack # SH22G that you also mentioned is another very nice rack from Kuat and you certainly would not go wrong with choosing this model. It provides an upgraded aluminum construction that will give you a very lightweight and rustproof carrier. A bike and hitch lock are included so they will not need to be purchased separately and it features the same tilting mechanism as the Transfer. While this particular rack is an upgrade from the Transfer, if your main concern is simply its durability and strength for long trips, the Transfer will hold up perfectly and the more premium model is not necessary.
I have attached a couple short video demonstrations on these carriers that you can also check out.
