on older axel without the ez-grease zerk, how much grease should be applied to the spindal before installation of the rebuilt hub assembly?

It's a good idea to first coat the hub with grease. But you don't have to go too crazy as the grease from the hub will do most of the work.
When you are assembling the hub components you want to make sure you fill every space of the bearings with grease like part # L11465. To make this easier you can use a bearing packer like part # L70025.
Then, insert your bearings and grease seal in the hub and mount your hub on your spindle.
I attached a video that shows the process done by one of our installers.
