What Are Pros and Cons of Going to Larger Trailer Tire Size? 205/75-15 to 225/75-15
Question:
What are the advantages/dis-advantages in changing trailer tire size? How would the increased width/height of the larger tire impact fuel mileage and tire temperature?

The biggest advantage and reason most people go with a larger trailer tire is the increased weight capacity that the larger tires offer. The larger diameter offers a negligible amount of better ride quality for the trailer since the larger the tire the less "affected" it is by smaller bumps. You can also gain a bit more ground clearance if needed as well, but really it's mostly about gaining weight capacity and then determining if you have the needed fender/frame clearance to go to the larger size. Only downside is maybe cost but typically the price difference isn't that large at all.
Going from your size of 205-75R15 to 225-75R15 is a very common upgrade and gets you a solid amount of additional weight capacity while only having to worry about a smaller increase in size so clearance is rarely an issue. The difference is overall diameter is 1.3 inches which translates into about .65 of an inch of less fender clearance.
The Karrier trailer tire part # AM10303 that you referenced would definitely meet your needs for the larger size you want. This tire has a weight capacity of 2,830 lbs at 80 psi, a speed rating of 81 mph. I attached a review video for this tire for you to check out as well.
