Welcome back, Yvonne!
I recommend going with the Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" # C77MJ you were looking at. It has plenty of tongue weight for carrying heavy e-bikes (675 pounds of capacity, to be exact) and its a bolt on application with just 4 bolts! Shouldn't take much longer than a half hour to do. We have it listed as 4 out of 10 for the install difficulty, so it really is an easy one to install.
What kind of e-bike are you currently looking at? There are definitely some cool ones on the market now.

I have a Toyota Rav 4 EXL which I installed this hitch on. The hitch went on in twenty minutes, but would recommend a second set of hands. Simple and easy was what I was looking for and that’s what I got. I have a Thule six bike vertical carrier that I use with this hitch all the time. Four mountain and two e-bikes and never have a problem. I’ve also have a boat and trailer weighing around 4500lbs and have no problem.
