For a hitch that fits your 2024 Honda Odyssey EX-L I recommend the Draw-Tite Max-Frame Trailer Hitch Receiver # 76170. The main reason I would choose this hitch over other options is the concealed crosstube. Not only does this improve clearance, it also gives the hitch a much cleaner look.
The only hitch I think is better is the Hidden Hitch by Draw-Tite # DT76GR, but that comes at a greater cost. This hitch has a completely removable receiver so you have no clearance lost and a factory look when not in use.
For a wiring harness, you can use the Curt # C56382 you were looking at. However, the most reliable option is going to be the Tekonsha # 118753. Both plug into the connection point in your rear cargo area and will provide you with a 4-way to power your trailer's signal lights. If you plan on towing you will also need a ball mount like the etrailer # e38NR.
