Why Would Weight Distribution Spring Bars Pop Out Around Corners

what would make them pop off when taking a corner?

If you are making very tight turns like backing into a campsite you really should be removing the spring bars as they are not designed for sharp corners. The bars should not be coming out under normal driving or normal turning though. If so, you may not have the system set up properly. If you have a # RP66074 like you referenced I would recommend you go over the installation instructions and review video that I attached to make sure your setup is installed properly.
You should check the weight distribution head and trunnion head for damage and replace them if needed.
