Question:
Hi etrailer, I plan to purchase hitch Item # C13395 for my 2020 Jeep Cherokee High Altitude edition. It does not have the tow package. What other part should I purchase if I want to install a 7-way connector? I assume I’ll probably something like item# C56406 and then some sort or 7-way connector, something maybe like HM40975 and/or ETCB7. Thanks.

You are correct with most of the parts. The Curt Hitch item # C13395 is confirmed to fit all models of the 2020 Jeep Cherokee, including your High Altitude Edition. This hitch is custom fit and bolts to your Jeep with included hardware.
Since your Jeep does not have the towing package, to install a 7-Way harness you will need two separate wiring harnesses because they don't make just one that'll do the job.
The first harness you'll need is the Curt Vehicle Wiring Harness item # C56406. This custom-fit T-connector plugs into your Jeep's wiring harness, which is located behind the tail lights. This will provide you with a 4-flat connector.
The second harness you will need is the Universal Installation Kit for Trailer Brake Controller item # ETBC7. The kit includes a pre-wired 7- and 4-way trailer connector that mounts easily at the rear of your Cherokee with an included bracket. This kit is designed for use on a vehicle with an existing 4-way flat trailer connector and plugs directly into it.
Some other parts you will need to tow a trailer with your 2020 Jeep Cherokee are listed below:
Wiring Harness Mount - No-Drill Mount Bracket item # 18136
Brake Controller - Redarc Tow-Pro Liberty Brake Controller item # RED24FR and Wiring Adapter item # RED69FR
Ball Mount - Curt Towing Starter Kit for 2" Hitches item # C45534
The Hopkins Item # HM40975 you referenced won't fit your Jeep. It's used to replace factory 7-ways that get damaged.
